On an unassuming corner in the heart of my home town, lies Caseificio Lanzillotti, a family-run cheese shop that’s been perfecting the art of mozzarella and burrata for three generations. Here, cheese isn’t just made — it’s crafted, every morning, by hand, following age-old traditions passed down through the Lanzillotti family.

Led by owner and master cheesemaker Francesco Lanzillotti, you’ll be welcomed not as a tourist, but as a guest, stepping behind the scenes into a world of fresh curds, warm whey, and authentic Puglian hospitality.

Get Hands-On with Nodini & Burrata

This intimate workshop isn’t about standing back and watching — you’ll be right in the middle of the action, learning the delicate art of tying nodini (mozzarella knots) and the trick to crafting the perfect burrata pouch, all while your hands brave water at a steamy 80°C. Don’t worry if you’ve never done it before — Francesco’s expert guidance and good humour will have you laughing your way through the learning curve.

As the guests shaped their first nodini, a playful challenge began to unfold. Francesco couldn’t resist turning the demonstration into a light-hearted competition, keeping a close eye on who had the makings of a true cheesemaker.

One young lady showed such natural talent that Francesco declared her the unofficial champion of the day — and with a grin, offered her a job on the spot.

“You can start tomorrow… but you’ll need to be here at 4am!”
